Sweet treats- Choc Chip Cookies
This breastfeeding business makes me hungry and more so it makes me crave something sweet! If you’re looking for an easy to bake sweet treat to have when guests arrive, take to a kids party, as small party favours or just to devour on your own then I have your biscuit! These buttery shortbread style cookies are perfectly evil, easy and go down a treat with a cup of coffee. Filled with chocolate chip chunks I had to hide these babies from the non GF eater in my household to ensure the batch made it to the party in one piece.
Ingredients
2 1/2 cups of Gluten Free plain flour- in the past I have made up my own gluten free flour, however due to being a tad time challenged (with baby) I grabbed a packet of Orgran all purpose plain GF flour find it here as it is made up primarily of Rice flour, Maize starch and Tapioca flour which make great shortbread (the box even displays a picture of perfect shortbread).
250g unsalted softened butter
1 cup castor sugar
1 egg (free range)
1 teaspoon cinnamon
2 teaspoons vanilla essence
250g dark chocolate- I mixed half chocolate buds and the other half chocolate chunks- there is no greater joy when biting into a choc chip cookie than a big old chunk of chocolate taking up a third of the biscuit! Did I mention these biscuits are perfectly evil?!
Preheat the oven to 180 C and line two baking trays with baking paper, I often butter the corners of the tray so as the baking paper will stay down.
Add butter, sugar, egg, cinnamon and vanilla and using a mixer cream all ingredients together. Then add flour and continue to mix until all ingredients are combined.
Pour the mixture into a large bowl and add in the chocolate pieces then mix together using a wooden spoon.
Spoon balls of mixture onto each tray allowing a gap of 3cm between each biscuit.
Bake for 16-20 minutes and make sure the outside of the biscuit is firm and slightly golden before taking out of the oven, the inside of the biscuit should still be soft. After 5 minutes out of the oven transfer biscuits to a wire rack for cooling.
