When you’re craving lunch and trying to avoid the bad snacks that linger in the office vending machine it’s time to think of creative ways to excite your taste buds whilst at work. Make your midday munchies something to look forward to! Packed with plenty of protein these brown rice cakes are smothered in fresh avocado and layered with spinach under tuna (canned) and sliced tomato. For extra bite and fun I took some haloumi to work today and grilled slices of it in the oven before dressing my lunch with two slices per rice cake. This lunch offered so much flavour and kept me going until the end of the day.
